All of “OneDayOneSalad” recipes, serve 1 person. If you like to prepare more servings, just increase the portions of the ingredients.
2 medium potatoes
1 medium tomato
1 small red onion
Peel and boil the potatoes until they get soft enough. Wash and cut the tomato into small pieces. Peel and cut the onion into small cubes. In a bowl, put the boiled potatoes and smash them with the fork. Season with salt. Add the tomato, the onion, the parsley leaves and the olive oil, and mix well. Sprinkle a pinch of dried oregano and your salad is ready.
Optionaly, you can squeeze 1/2 lemon over the potatoes, before you add the rest of the ingredients.
