Colorful salad

salad with bulgur and vegetablesIngredients (1 serving):

  • 1 cup bulgur
  • 1 medium to large tomato
  • 1 small cucumber
  • 2-3 peppers (green, red whatever you like)
  • 1 fresh green onion
  • A few purslane leaves
  • A few mint leaves
  • A few black olives
  • Olive oil and vinegar

Soak the bulgur in water until it softens (if it is raw, it takes longer so prepare it 1-2 hours before lunch time). Wash, peel and cut the vegetables and chop the onion and the green leaves. Strain the bulgur if there is water left in the bowl. Mix all the ingredients together, add the vinegar and the olive oil and mix again. Let it stand for 10 minutes in the fridge before you eat; the flavours are combined and the taste becomes better.
