This is a variation of the previous salad (colorful salad)
Ingredients (1 serving):
- 2/3 cup of lentils
- 2 medium tomatoes
- 1 small cucumber
- 2-3 sweet peppers (green and red)
- 1 fresh green onion
- 1 red hot pepper
- A few purslane leaves
- A few mint leaves
- A few black olives
- Olive oil and vinegar
Wash and boil the lentils. Wash, peel and cut the vegetables and chop the onion, the red hot pepper* and the green leaves. Strain the lentils and mix all the ingredients together into a large bowl. Add the vinegar and the olive oil and mix again.
I used my homemade apple vinegar, and olive oil flavoured by little hot peppers (I just soak hot peppers in a bottle of olive oil and it becomes more spicy)
Serve with barley rusks on the side!
*don’t forget to wash your hands before you touch your eye!
