“Vinegary” salad

salad with bulgur and pickled veggiesOne more salad with bulgur as the basic ingredient, and many, many more… I have just ate it and it was very nice and light!

Ingredients (1 serving):

  • 1 cup bulgur
  • 1 medium to large tomato
  • 1 small cucumber
  • 1 pickled pepper
  • 1 pickled carrot
  • A few pickled capers
  • 2 small hot peppers
  • 1 fresh green onion
  • A few purslane leaves
  • A few mint leaves
  • A few black olives
  • Olive oil and vinegar
  • 3-4 barley rusks

Put the bulgur into a bowl with water. Soak as long as it takes to soften (if it is raw, it takes longer so prepare it 1-2 hours before lunch time).

Wash, peel and cut the veggies. Chop the onion, the hot peppers and the green leaves. Cut the pickled pepper and carrot into small pieces.

salad with bulgur and pickled veggiesStrain the bulgur if there is water left in the bowl. Mix with the veggies, add the onion, the green leaves, the pickled veggies and capers, the hot peppers, the vinegar and the olive oil and mix again.

I have used pickled veggies and capers I’ve made from scratch, but you can also buy these from the grocery store.

I broke the barley rusks into pieces and mixed them in the salad to absorb any excessive liquids.
