Healthy lunch ideas: Winter blooming salad

I love pulses in my salads!
I don’t add salt in my salads, but you can if you like.
Today in our salad bar:
Ingredients :

  • 1 cup of boiled lentinls
  • 1 medium tomato
  • 1 fresh onion
  • 1-2 cabbage leaves
  • 1 cup chopped pumpkin
  • 1 green pepper
  • A few black olives
  • A few leek slices
  • Olive oil
  • Vinegar
  • 2-3 barley rusks


Boil the lentils, chop the cabbage, the onion, the pumpkin, the leek and the pepper, cut the tomato into pieces. Break the barley rusks and put them in a bowl. Add the lentils and the rest of the ingredients, a few drops of vinegar and 1-2 tbsp olive oil. Mix and serve!
