The easiest to make dough for mini pies filled with cheese, spinach, zucchini or whatever you like.
Ingredients (for about 45 pieces)
1 cup melted butter or margarine
1 cup olive oil
1 cup of yogurt
1 tsp. baking powder
1 tsp. salt
Flour (almost 5 cups)
Mix yogurt, oil, butter, baking soda and salt in a bowl. Stir well to unify.
Add gradually the flour until you make a soft and easy to knead dough.
Cover with a towel and let aside as you prepare the filling.
Take small portions of the dough,
with the palm and fingers.
Put a small portion of the filling in the center and fold.
Press the edges with a fork.
Bake for about 20 minutes at 190-200°C (374-392°F)
As for the filling, I made a quite simple one, with grated zucchini, feta cheese, parsley, spearmint, dill, onion, olive oil and breadcrumbs.
Grate one zucchini and finely chop one red onion. Wither in a ceramic pan over medium fire for 5 minutes. In a bowl, add the withered zucchini and onion, add pepper, parsley, dill and spearmint and 2 tbsp. breadcrumbs and mix well. Add a piece of feta cheese (70-100 gr) melted with a fork and 2 tbsp. olive oil and mix well. The filling is ready.
