Healthy salads for lunch:
Lets mix fresh green veggies with colorful beetroot, legumes and dried fruits!

Ingredients :

  • 1 cup boiled beans
  • 4 lettuce leaves
  • 1 small cucumber
  • 1 fresh onion
  • 2 beetroot heads
  • 1 cup chopped broccoli
  • A few leaves of arugula
  • A handful of raisins
  • 1 tbsp sunflower seeds (peeled)
  • 1/2 cup Olive oil
  • 1 tbsp honey
  • 1 tbsp lemon
  • 1 tbsp red vinegar

I love pulses in my salads!
I don’t add salt in my salads, but you can if you like.
Today in our salad bar:
Ingredients :

  • 1 cup of boiled lentinls
  • 1 medium tomato
  • 1 fresh onion
  • 1-2 cabbage leaves
  • 1 cup chopped pumpkin
  • 1 green pepper
  • A few black olives
  • A few leek slices
  • Olive oil
  • Vinegar
  • 2-3 barley rusks

“As the winter comes” salad

full saladOne more great and healthy salad today, and also, a big welcome to the first lettuce of the season!

Ingredients :

  • 4-5 lettuce leaves
  • 1 small cucumber
  • 1 small red pepper
  • Half a quince
  • 1 beetroot head
  • A few cracked green olives
  • Parsley
  • Pickled eggplant, carrot and pepper (optional)
  • 1 fresh green onion
  • For marinading the quince: 1 cup olive oil, 2 tbsp vinegar, 1 tbsp honey or grape syrup, salt and pepper
  • Some sesame seeds
  • 1-2 barley rusks

“Rainy autumn” salad

salad with lentilsToday, autumn is getting quite serious. It’s been raining all day and the temperature is down a few degrees. I feel that the mood for tomato and cucumber salads is gone for good, along with the sea swimming days I guess!

Plus, today I checked the 2 jars of pickled veggies I made last week, and since they were a success, I had to try them in a salad!


  • 1 cup lentils
  • 2 carrots
  • 1 green onion
  • 2-3 slices of pickled eggplant
  • 1 pickled red pepper
  • 1 tbsp raisins
  • A few celery leaves
  • A few green cracked olives
  • Olive oil

Pepper salad

  • 3-5 peppers (any kind and shape)

  • 1 small red hot pepper
